Beat the heat!

It can be really hard to get motivated to shop and cook during the hottest summer days. We can't help ourselves. When the temperatures soar we slow down, turn on the AC, and find solace in cool drinks, frozen treats, and our barbeques.  

This recipe for Grilled Honey Mustard Chicken with Arugula & Green Apple Salad was submitted by sixtyone45, who describes it as "super simple, super fast and SUPER tasty." We love the addition of the green apples for an extra-tangy crunch.

We decided to make lunches a bit simpler for ourselves this week with this make-ahead Marinated Vegetable Salad. It's chock full of veggies (and chickpeas for protein) and we like the quick convenience of being able to simply pull it out of the fridge at high noon. Ta da! Lunch is served!
