Kale
Kale, also known as borecole, is without a doubt one of the healthiest vegetables around.
What makes kale very special is its nutrient content – it contains vitamin A, C, E, K, and phytochemicals called lutein and zeaxanthin, which are really good for your eyes. In addition, kale is a good source of soluble fiber which can help lower your blood cholesterol level. Kale is available in curly, ornamental, or dinosaur varieties, all of which differ in taste, texture, and appearance. You can find kale in grocery stores throughout the year but it is best to get them in season from the middle of winter through the beginning of spring when it has a sweeter taste.
Cooking with kale is fairly simple. Kale can be steamed, sautéed, braised or added to soups, stews and casseroles.
