Ingredients

Servings: 12
Yield: 12 muffins
  • 1 cup pastry flour
  • 1/2 cup coconut flour
  • 1/2 cup whole wheat flour
  • 1/2 sugar
  • 1 T. Baking Powder
  • 1/2 tsp. salt
  • 3 eggs beaten
  • 1 cup coconut or almond milk
  • 2 T. butter, melted
  • 1 T. vanilla
  • 2 T. organic raw blue agave syrup
  • Fresh Strawberries and/or Blueberries to Top
  •  
  • For the glaze...
  • 1/2 confectioners sugar
  • 2 T. Lemon Juice
  •  

Directions

  1. 1. Preheat oven to 375 degrees.
  2. 2. In a large bowl sift dry ingredients.
  3. 3. In a second, smaller bowl, combine wet ingredients.
  4. 4. Pour wet into dry and stir until just combined.
  5. 5. Scoop into paper lined muffin cups
  6. 6. Place a few blueberries or one half strawberry on top of each muffin.
  7. 7. Bake for 12-17 minutes or until a toothpick comes out clean.
  8. 8. For the glaze, combine the confectioners sugar and lemon juice and drizzle over cooled muffins
