Ingredients

Servings: 4
Yield: One 9 x 13" pan
  • 2 cups cornmeal
  • 1 cups milk
  • 1½ cup buttermilk
  • 1½ cup all-purpose flour
  • 1 tbsp baking powder
  • 2/3 cup sugar
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup vegetable oil

Directions

  1. Preheat oven to 375 F
  2. Grease 9x13” pan with butter
  3. In a bowl, combine cornmeal, buttermilk, and milk; soak for 10 minutes
  4. In a large bowl, mix together flour, baking powder, sugar, and salt; whisk in the cornmeal mixture, eggs, and oil
  5. Pour into pan
  6. Bake for approximately 30 minutes or until toothpick inserted in center comes out clean
  7. Let cool in pan before transferring to cooling rack
