Easy Zucchini Bread

Adapted from Kraft's zucchini bread recipe. I substituted Miracle Whip with Greek yogurt, ditched the chocolate chips, and added more zucchini

Ingredients

Servings: 4
Yield: One loaf
  • 1 egg
  • 1/2 cup Greek yogurt (I used fat free Greek yogurt)
  • 2 cups grated zucchini, squeezed-dry
  • 1.5 cups flour
  • 1 cup sugar
  • 2 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp salt

Directions

  1. Heat oven to 350 F
  2. Grease a loaf pan with cooking spray
  3. In a large bowl, beat egg and Greek yogurt until well mixed and then stir in zucchini
  4. In another bowl, mix the dry ingredients together and then gradually add them to the zucchini mixture
  5. Stir until moistened
  6. Pour into the loaf pan
  7. Bake for 35-40 minutes until toothpick inserted in centre comes out clean
  8. Cool in pan for 15 minutes before placing it on a cooling rack
