Adapted from Kraft's zucchini bread recipe. I substituted Miracle Whip with Greek yogurt, ditched the chocolate chips, and added more zucchini

1 egg

1/2 cup Greek yogurt (I used fat free Greek yogurt)

2 cups grated zucchini, squeezed-dry

1.5 cups flour

1 cup sugar

2 tsp ground cinnamon

1 tsp baking soda

1 tsp salt

Directions

Heat oven to 350 F

Grease a loaf pan with cooking spray

In a large bowl, beat egg and Greek yogurt until well mixed and then stir in zucchini
-
In another bowl, mix the dry ingredients together and then gradually add them to the zucchini mixture

Stir until moistened

Pour into the loaf pan

Bake for 35-40 minutes until toothpick inserted in centre comes out clean

Cool in pan for 15 minutes before placing it on a cooling rack
