A healthy and satisfying mix of softened oats, yogurt, shredded apple, and other yummy bits and pieces. Plus it's completely customizable to your tastes!

Ingredients

Servings: 4
Yield:
  • 100g rolled oats
  • 100ml cold milk
  • 20ml apple or orange juice
  • 150g plain or Greek yogurt
  • 1 large granny smith apple, cored and roughly grated
  • 1 tbsp honey
  • ½ tsp vanilla extract
  • pinch of cinnamon
  • 30g chopped pistachios, almonds, or walnuts
  • Whatever else you want to add: fresh/frozen/canned/dried fruit, seeds, nuts, or flavouring like orange zest or cardamom.

Directions

  1. Put the oats in a mixing bowl and add the milk and juice. Stir and leave them to soak overnight in the fridge.
  2. When ready to serve, add the yogurt, apple, honey, cinnamon, vanilla, and whatever mix-ins you're using (my favourites are pistachios and blueberries).

    I have been eating Bircher Muesli since I can remember. Only my father calls it "beer muscles" because he cannot pronounce it properly. This recipe is perfect to make in the summer time with fresh fruits. You can really use any fruit combination you want and simply mix in yogurt and oats. There is no need to have the oats soaking overnight, I'm usually in a hurry when I make this. This recipe is quick and easy and perfect for a hot day!!
