These pancakes are super simple, high in fibre and protein. They're diabetic-friendly, gluten and wheat free too!

Ingredients

Servings: 4
Yield:
  • 1/2 cup quick cooking gluten-free oatmeal (if not gluten intolerant just use regular oats)
  • 1/2 cup cottage cheese (2%)
  • 1 teaspoon vanilla extract and cinnamon
  • 2 whole eggs
  • coconut oil (for frying)
  •  

Directions

  1. Blend all ingredients in a blender.
  2. Heat 1 tablespoon of coconut oil in a pan and cook pancakes as normal.
  3. Top with your favourite pancake topping!

Notes & Tips: Studies have shown that just ½ teaspoon of cinnamon daily can significantly reduce LDL (bad cholesterol). Studies are also showing that cinnamon has regulatory effects on blood sugar levels, making it an excellent addition for anyone with diabetes Type 2 or any other blood sugar issues.
