Frozen banana bites are like mini sundaes, coated in chocolate and rolled in coconut. These are perfect as a relatively healthy snack or bite-sized dessert.

Ingredients

Servings: 16+
Yield: Approximately 2 dozen
  • 2 large bananas, peeled & cut into 1/2 inch slices
  • 2 cups of milk chocolate chips
  • 1 cup of shredded, unsweetened coconut
  •  

Directions

  1. Slice bananas and set aside. Line baking sheet with parchment paper or foil. Place shredded coconut in a shallow dish.
  2. Melt chocolate chips (1/2 cup at a time so the chocolate doesn’t harden) in the microwave for about 45 seconds.
  3. Using a spoon, dip 1 banana slice in melted chocolate, coating completely. Shake off excess chocolate and using your other hand sprinkle coconut on the top of the banana. Drop the banana slice coconut side down on the baking tray and if the other side of the banana needs more chocolate add some with the spoon. Sprinkle more coconut on that side of the banana to coat and on to the next! Repeat with remaining bananas, chocolate and coconut.
  4. Freeze until firm, about 3 hours and serve cold.
