This is a great weekday meal, and the kids love it when it's served DIY style with lots of different toppings.

1/2 red onion, sliced

1/2 red pepper, sliced

2 boneless and skinless chicken breasts, sliced

6 large flour tortillas

Toppings

3 cups lettuce, chopped

1 tomato, diced

2/3 cup Cheddar cheese, grated

1/3 cup sour cream

1/3 cup salsa

1/4 cup hot pepper rings

avocado, pitted and sliced

Directions

Add the oil to a large frying pan set on medium-high heat. Add the onion and red pepper and fry until softened.

Add the chicken and continue to cook until browned.

Transfer to bowl and set out with the other toppings. Divide among the tortillas. Wrap and eat!

We don't use traditional store-bought fajita seasoning so we can better savour the flavour of the meat and the veggies. And it cuts down on the sodium too!
