1 roasted chicken

head of romaine

8 strips of bacon, cooked and cut into smallish pieces

1/2 cup of grated Parmesan cheese

2 tomatoes, diced

Directions

Separate meat from the chicken, set aside.

Wash and tear the lettuce and divide among the plates. Top with chicken, bacon, tomatoes, cheese, and croutons.

I like to keep this salad really light, so in terms of salad dressing I use a 50/50 mix of really good olive oil and balsamic vinegar. But if the calories don't matter you can use a creamy dressing instead.
