Sweet and Savory Quinoa and Brussels Sprout

Ingredients

Yield:
  • 1 cup quinoa
  • 2 cups water
  • ½ cup vegetable oil for frying
  • 500 g Brussels sprout
  • 4 slices bacon
  • ¼ cup pine nuts
  • ¼ cup dried cranberries
  • Salt and pepper to taste

Directions

  1. Rinse quinoa in water (skip this step if your quinoa is already pre-rinsed)
  2. Add quinoa and water in a small saucepan; bring to boil, cover with lid, and turn the heat down to simmer; cook for 15 minutes
  3. (The quinoa is ready when the grains are translucent and still slightly crunchy)
  4. Cook bacon on skillet over medium-high heat until crispy and then remove bacon to a plate lined with paper towels
  5. Add ½ inch of water on a pan and bring to boil; add Brussels sprout and cover with lid, stirring occasionally; cook until all the water has been absorbed and the Brussels sprouts are crisp tender, about 5 minutes
  6. Mix the quinoa with Brussels sprout in a large bowl
  7. Crumble the bacon
  8. Add dried cranberries and pine nuts
  9. Add salt and pepper to taste
