1 cup quinoa
2 cups water
½ cup vegetable oil for frying
500 g Brussels sprout
4 slices bacon
¼ cup pine nuts
¼ cup dried cranberries
Salt and pepper to taste

Directions
Rinse quinoa in water (skip this step if your quinoa is already pre-rinsed)
Add quinoa and water in a small saucepan; bring to boil, cover with lid, and turn the heat down to simmer; cook for 15 minutes
(The quinoa is ready when the grains are translucent and still slightly crunchy)
Cook bacon on skillet over medium-high heat until crispy and then remove bacon to a plate lined with paper towels
Add ½ inch of water on a pan and bring to boil; add Brussels sprout and cover with lid, stirring occasionally; cook until all the water has been absorbed and the Brussels sprouts are crisp tender, about 5 minutes
Mix the quinoa with Brussels sprout in a large bowl
Crumble the bacon
Add dried cranberries and pine nuts
Add salt and pepper to taste
