Crusty Baked Salmon

A heathier substitute to battered and breaded fish. This recipe brings out the flavours of fresh salmon with a hint of heat from the mustard.

Ingredients

Servings: 4
Yield:
  • 1 lb Salmon Fillet (450g)
  • 1 tsp Dijon mustard (5ml)
  • ¼ tsp Black pepper (1ml)
  • ¼ cup Pecans, crushed (50ml)
  • ½ cup Panko crumbs (50ml)
  • 1 tsp Butter (5ml)
  • 4 Lemon slices

Directions

  1. Place salmon fillet, skin side down in ovenproof dish.
  2. Spread Dijon mustard evenly over salmon.
  3. Sprinkle with black pepper
  4. Combine pecans and Panko in small bowl. Sprinkle over salmon.
  5. Dot with tiny pieces of butter.
  6. Bake in preheated 350F (175C) oven 15-20 minutes or until salmon in cooked through.
  7. Garnish with lemon slices.

Notes & Tips

Notes & Tips: Serve with steamed brown rice, green beans and coleslaw. Can also be used on salmon steaks, tuna, halibut and tilapia.
