Ingredients

  • 1 boneless chicken breasts
  • MARINATING SAUCE
  • 4 tablespoons soy sauce
  • 3 garlic cloves, minced
  • 1 tablespoon vinegar
  • red pepper flakes
  • 1 teaspoon cornstarch
  • Vegetables
  • 1 tablespoon oil, for stir-frying
  • 1 onions, sliced
  • 1 celery, sliced
  • 2 tablespoons slivered gingerroot
  • 1 tablespoon grated gingerroot
  • 1 bell peppers, sliced
  • 2 cups bok choy, chopped
  • 3 cups bean sprouts

Directions

  1. Cut chicken into 1/2 inch cubes
  2. Prepare marinating sauce and add to chicken cubes.
  3. Sit in refrigerator for at least 2 hours.
  4. Heat the vegetable oil in a large skillet or wok.
  5. Drain chicken keeping the juice.
  6. Stir fry the chicken for 4 minutes over high heat.
  7. Push the chicken to the side and add onion, celery, bell pepper and ginger.
  8. Add reserved marinating juice
  9. Cook, stirring constantly for 5 minutes.
  10. Add Bok choy; cook another 2 minutes,
  11. Add the sprouts and stir-fry another 2 minutes.
  12. Serve while sprouts are still crisp.
