For 8 peppers

8 peppers of your choice

salt and pepper to taste

1 cup of brown rice

1lb of ground chicken

1 egg

1/2 cup bread crumbs

1/2 cup parmesan cheese, grated

1/4 cup milk, add more if dry

1/2 tsp garlic powder
-
1 tsp oregano
-
1/2 tsp black pepper
-
1/2 tsp salt

1/4 cup chicken broth

Directions

Cook rice approx. 3/4 of the way (10-15 minutes)

Cut peppers in half, clean out and sprinkle some salt and pepper inside

Combine ground chicken, egg, rice, bread crumbs, cheese, milk, spices and mix together well

Stuff peppers, should be pretty full

Preheat oven to 375F
-
Place peppers in corningware dish with chicken broth at the bottom and cover

Bake for 45-55 minutes
