Ingredients

Servings: 8
Yield:
  • 1 can chickpeas, drained
  • 1/2 onion
  • 1 clove garlic
  • 1/2 cup black bean flour
  • 1/4 cup cornmeal
  • 3/4 cup cilantro, chopped
  • 1 flax egg (2 T flaxseed meal + 4 T warm water)
  • 1 tsp lemon juice
  • 1 t cumin
  • 1 t sea salt
  • 1 T olive oil
  • 2 T honey

Directions

  1. Drain and rinse chickpeas.
  2. Add all ingredients to a food processor and blend until the ingredients are combined and mixture is easy to handle.
  3. Cover a frying pan with a thin layer of olive oil.
  4. Shape mixture into chickpea nuggets and cook until browned.
  5. Let cool ad pat dry with a paper towel.
  6. Serve with your favourite dip!
