Roasting cauliflower elevates this vegetable to a whole new level! Some people even call it cauliflower "popcorn".

Ingredients

Servings: 4
Yield:
  • 2 tbsp vegetable oil
  • 4 cloves of garlic, finely chopped or grated
  • 1 cauliflower, cut into florets
  • 1/4 cup bread crumbs or panko
  • 4 hard boiled eggs (optional)
  • Salt & pepper to taste
  • 1/2 tbsp butter
  • For garnish: parsley, finely chopped

Directions

  1. Preheat oven to 425F
  2. Line a baking sheet with parchment paper and spray it with vegetable oil
  3. In a big bowl, mix together the oil, chopped or grated garlic, cauliflower, salt, and pepper; toss until the cauliflower is well coated
  4. Arrange cauliflower in single layer on the baking sheet
  5. Bake for 35 - 45 minutes until cooked through and golden brown; flip the cauliflower every 15 minutes or so to make sure they brown evenly
  6. (Optional): Make four hard boiled eggs while waiting for the cauliflower. When they're done, peel the eggs and cut them into small cubes.
  7. Mix the warm cauliflower with the eggs
  8. Add 1/2 tbsp of butter and let it melt
  9. Garnish with parsley and sprinkle with panko or breadcrumb

Notes & Tips: If you want, you can toast the breadcrumb or panko: Heat dry skillet over medium heat. Add breadcrumbs or panko and heat until toasted, approximately 3 minutes To make hard boiled egg: Put the eggs in a pot and cover with water. Cover with lid and bring to boil. As soon as the water boils, turn off the heat and leave the eggs in the water for approximately 10 minutes. Roasted cauliflower makes a great side dish for chicken curry. You can also serve it with naan.
