Yield:
  • 1 large onion, chopped
  • 3 tbsp (45 mL) olive oil
  • 2 tbsp (30 mL) ground cumin
  • 1 tbsp (15 mL) dried oregano
  • Sea salt and cracked black pepper
  • 3 bay leaves
  • 1 lb extra lean ground beef (2 pkgs)
  • 2 tbsp (30 mL) paprika
  • 2 tbsp (30 mL) chili powder
  • 4 tbsp (60 mL) malt vinegar
  • 1 tin tomato paste
  • 2 14 oz cans of diced plum tomatoes
  • 1 19 oz can red kidney beans
  • 1 19 oz can black beans
  • 1 cup (250 mL) red wine
  • 2 cups (500 mL) fresh sliced cremini mushrooms
  • 2 red peppers, chopped
  • Sour cream
  • Aged cheddar, grated

Directions

  1. Heat olive oil in a large heavy saucepan or casserole dish. Add onion and sauté until softened. Add cumin, oregano, sea salt, pepper, and bay leaves and stir for 2 minutes. Add ground beef and break apart with wooden spoon. Continue to cook until beef browned all over.
  2. In a small bowl, mix malt vinegar, paprika and chili powder together. Add to beef and stir for 1 minute longer. Add tomato paste, diced tomatoes, beans and wine. Add mushrooms, red pepper and season again.
  3. Bring to a boil, then reduce heat and allow to simmer for 1.5 to 2 hours, stirring often. Serve with rice, grated aged cheddar and sour cream.
