Hearty Leek, Potato and Bacon Soup

Ingredients

Yield:
  • 3 large leeks, chopped into rings (use only the white and pale green parts and make sure they're thoroughly washed)
  • 2 cloves of garlic
  • 2 tbsp butter
  • 1-litre package of vegetarian broth
  • 3 large white potatoes, chopped
  • 1 tbsp dried parsley
  • pinch of paprika
  • pinch of sea salt
  • pinch of freshly ground pepper
  • dash of chili sauce to taste

  • diced bacon or pancetta, cooked
  • sour cream
  • green onion, chopped

Directions

  1. Melt butter in large saucepan and add the leeks and garlic. Cover and cook on low for about 10 minutes until leeks are softened. Give it a good stir every couple of minutes.
  2. Add veggie broth, potatoes, and bring to a low simmer. Cook for 20 minutes.
  3. Working in batches, scoop the soup into a food processor or blender, puree, and return to saucepan set on low heat. Add seasonings and a few dashes of chili sauce to taste. Top with a good dab of sour cream, bacon, and green onion.

Notes & Tips: Serve with crusty bread and raw veggies for a nice light dinner.
